Chef’s Profile and Philosophy

Chef Takumi Hirose trained at renowned restaurants in Tokyo before moving to France to hone his skills at two-star establishments.
After returning to Japan, he worked as head chef at “Stellato” and “IL BOLLO,” later opening his own restaurant.
He continued to pursue “health-conscious cuisine” such as organic and gluten-free dishes, and became head chef at JUSANDI in 2019.
